Apples

  

Yesterday saw the arrival of the first apples of the season.  The early apples, our Morgan's were sourced from our newest Chard Lane Orchard, just 1 mile away from the farm.  The juice pressed from these apples will eventually go into our single variety Morgan Sweet cider, but before this happens it will be pumped into our fermentation vessels, where hopefully a nice co-operative strain of 'wild yeast' will take over, and turn the juice into delicious flavoursome cider.

The process of cider making at Perry's goes a little like this: The apples once harvested are quickly washed and any leaves etc. removed they then take a final journey into the mill where they're quickly and humanely turned into a pulp. We build this pulp into a cheese using the traditional 'rack and cloth', before exacting up to 9,000 litres per day using our twin presses.
